Oooo Christmas Tree



This drink combines all the flavours and smells of Christmas. The aromas and tastes of festive fruit, spices and even the tree its self can be enjoyed in this cocktail. Nice warm or cold depending on your mood.

The first stage of this cocktail is to make the pine needle syrup, but the good news is that this can be made up to a week in advance.


Pine Needle Syrup:

  • 2 cups of either Douglas or Scotch Pine needles ( aim for green tips)
  • 2 Cups of Water
  • Zest of one orange
  • 2 cloves
  • 2 tbsp. honey
  • 10 whole peppercorns
  • 2 cups caster sugar

Main Drink (per cocktail)

  • 50ml pine syrup
  • 25ml brandy
  • 75ml cider
  • 75ml Darjeeling tea


  1. Place the pine needles and water in a saucepan and boil for roughly 5-10 minutes, resulting in a nice strong tea. Strain the pine needle tea off and place in a clean saucepan, add in the orange, cloves, honey and peppercorns then boil for five minutes. Strain again and then add the sugar and stir over a low heat until the sugar dissolves (should take no longer than five minutes). Strain into a sterilised jar. The syrup will keep for over a week.
  2. Stir the syrup, brandy and cider together and then finish with either hot or chilled Darjeeling tea. The cocktail can then be served in a mug as a winter warmer or chilled in a tall glass with ice. Ideal enjoyed whilst listening to Christmas crooners!
